Here's the part that often surprises people: a truffle’s magic is its aroma — and the aroma fades fast. About half of it is gone five days after harvest. By day ten, you’re down to a quarter — you’re not tasting a truffle anymore, you're tasting a trace of what it was. So “fresh” isn’t a detail. It’s the whole point.
By the time an ordinary truffle reaches your kitchen, half its aroma can already be gone. Ours arrives while its aroma still fills the room.

Most truffles that reach American kitchens have passed through a long chain of hands — brokers, wholesalers, exporters, distributors — pooled together, sorted and routed through a slow, century-old distribution system. By the time one lands on your counter, it’s often more than five to seven days old. And if you ask the questions that matter — where was this harvested? When? by Whom? — no one can answer. Because no one kept track. That’s been the standard for decades.
We founded American Truffle Company to change it. Two ways.

The freshest Périgord you can buy — harvested the day before it arrives at your door steps.
Choose your delivery date, and we set the harvest in motion. Your grower gets two days’ notice. On the day before your delivery, your truffle is harvested from the ground and shipped that same day — overnight, by express carrier. It reaches you about a day old, its aroma very much intact. This is the truffle we grow here, on American soil, using our cultivation science that helped establish the Périgord on this continent.
We harvest only what the season gives us. There is only a finite amount of truffles that mature each day. When a delivery date is claimed, it’s gone — so the calendar can fill up quickly.

ATC sources directly from farms across multiple regions in Italy, Spain, and France — never the distributors everyone else sources from. Our growers harvest and drive the fresh truffles to the airport the same day. The truffles fly commercial to the U.S., then arrive at your door overnight by express carrier. They reach you 48 to 72 hours from harvest — still inside the peak window, and far fresher than anything the traditional trade can offer. The same Périgord black truffle. The same full biography. Just a different road to your home.
These are small farms, and each week’s harvest is finite. It’s first come, first served — once the week’s truffles are spoken for, they’re gone.

We grade on aroma, not looks.
The most fragrant truffle is almost never the prettiest one. A chef shaving tableside may want a flawless sphere for the show of it; for anyone cooking at home, aroma wins every time — because aroma is flavor. So we choose the truffle whose aroma fills the room, not necessarily the one that looks best. Yours may arrive organically-shaped, rugged and irregular—straight from the ground and just as it’s meant to look. What really matters is the aroma.
Each truffle is wild and natural — no two alike. We choose the ones with the best aroma, which are not always the ones that photograph best.
Some have a flat, trimmed face. Sometimes a truffle is nicked in the harvest process — by a dog's paw or the edge of a hand tool. When that happens, we trim the affected area before it reaches the scale. You only pay for the truffle, not the trim.

These are the same truffles we supply to Michelin-starred American kitchens and to the chefs at the Napa Truffle Festival, which we founded. Some of them have even harvested truffles from our partner orchards themselves.
Our Chief Scientist, Professor Paul Thomas, has published more than 40 peer-reviewed papers, and studies truffle cultivation on four continents. In 2018, a partner orchard in Sonoma produced the first Périgord black truffle grown using American Truffle Company's proprietary scientific methods — proof the science works.

You'll know exactly what to do.
Thin slices release the most aroma. A proper shaver — adjustable — is the essential tool for it. A cheese slicer won’t come close.
Store your truffle in an airtight container with a few eggs, still in the shell, overnight. The aroma will pass right through the shells and infuse the yolks. You can have your truffle and eat it too.
Wrap it in a dry paper towel, change it daily, and refrigerate — never freeze. Stored properly, it keeps for 10 to 15 days (although the aroma continues to dissipate throughout).

How fresh, really?
American truffles arrive about a day from harvest; European, 48 to 72 hours — both well ahead of the week-old truffles that come through traditional distribution. With proper care, they keep for 10 to 15 days.
Is it really from where you say?
Yes — and you can check. Every truffle’s QR code reveals its harvest date and time, the hunter and dog by name, and the farm’s story and region, plus a film of a real hunt on that ground.

When can it arrive?
For American truffles, you choose the delivery date — any day at least two days out, Tuesday–Saturday — and we harvest to match it. European truffles always arrive on a Thursday; order by 9am Saturday Pacific time and it’s delivered the following Thursday. Or you can pick any Thursday beyond that.
How do I keep it?
Refrigerate, never freeze. Wrap it in a dry paper towel and change it daily. (Store it with a few eggs overnight in an airtight container and thank us later.) If you notice white mold beginning to develop on the surface, that’s normal — rinse it off under cold water with a clean toothbrush or truffle brush, dry the truffle thoroughly, wrap it back in a fresh paper towel, and return it to the fridge in an airtight container.

Truffles are sold at the current market price, charged on the actual weight shipped — so you pay for exactly what arrives. Reserve ahead and your price is locked at the time of order.
