Ultra Fresh European-Produced Black Winter Truffles

(Tuber melanosporum)

The great truffles of Europe — bought direct from the farms that grow them, never the distributors everyone else buys from. They reach you 48 to 72 hours from harvest, still at their peak.

Graded on perfume, not looks

We grade every ATC truffle on aroma first, because perfume is flavor. Yours may not be the prettiest truffle money can buy — it'll be the one that fills the kitchen the moment you unwrap it. Why perfume beats looks ›

ATC Truffle Shaver — stainless steel blades, oak handle, handcrafted in Italy
$50
Complete your kit — ATC Truffle Shaver
Stainless-steel blades and an oak handle, handcrafted in Italy, with adjustable thickness to slice truly paper-thin — which is how you release the most aroma. A necessary tool, not an accessory: a cheese slicer will only bruise and waste your truffle.
Wrapped in moisture-wicking paper

Condensation is the enemy of a fresh truffle: trapped moisture invites mold and surface spoilage. We wrap every ATC truffle in moisture-wicking paper that draws that dampness away in transit, so yours arrives clean, firm, and fragrant — never sweating in its box.

Cold-chain, all the way

Packed with refrigerant gel packs for the commercial flight over and the overnight express-carrier leg to your door — so it arrives cold on your Thursday.

A biography for every truffle — meet the farms it came from

Every shipment carries a QR code to a page built just for it: a film of a real hunt at each source farm, and — for every truffle — its harvest date and time and the hunter and dog who found it, by name. A European shipment can gather several farms, so you may meet more than one.

Italy, Spain, or France? We source for the best truffle that week, wherever it grows — and reveal each truffle's origin right on that page. Curation you can check, not a guess.

Everything about your truffle

Good to know before you order

Why does ATC grade truffles on perfume instead of looks?+

Because aroma is flavor — and the most fragrant truffle is rarely the prettiest one.

Beautiful, uniform specimens matter to chefs shaving tableside, where the truffle is part of the show. At home, no one sees the truffle whole — they taste it. So we grade on nose first and looks second, and pass you the best-smelling truffle even when it's a little rustic in shape. That's the trait that decides how your dish tastes.

How does Direct from European Farms work?+

One shipment a week, bought straight from the farms.

ATC sources directly from farms across multiple regions in Italy, Spain, and France — never the distributors everyone else buys from. Those growers work together as a cooperative: they harvest, drive to the airport the same day, and the truffles fly commercial to the U.S., then travel the last leg to your door overnight by express carrier. Order by 9:00 a.m. Saturday Pacific to join that week's shipment, delivered the following Thursday — 48 to 72 hours from harvest, still inside the peak window and far fresher than the 5-to-7-day truffles the traditional trade moves.

How is my truffle packed and shipped?+

Harvested at the source farm and driven to the airport the same day, your truffle flies commercial to the U.S., then travels the last leg to your door overnight by express carrier. It rides in an insulated box with refrigerant gel packs, and each truffle is individually wrapped in moisture-wicking paper that pulls away the condensation that would otherwise invite mold and spoilage — so it arrives cold, clean, and firm on your delivery Thursday, 48 to 72 hours from harvest.

How do I store a fresh truffle — and can I freeze it?+

Refrigerate it, and never freeze it.

Wrap the truffle in a clean, dry paper towel, changed daily, and keep it in a hermetically sealed container so the aroma stays in. Watch for refrigerator cold spots that can dip below freezing. Freezing isn't a safety problem — it's a quality one: a thawed truffle turns soft and loses the texture and aroma that make it worth shaving. Stored well, an ATC truffle keeps about 10–15 days, and it's at its best within about 5 days — a longer window than most, precisely because it reaches you so fresh.

The egg trick: tuck a few whole eggs, in the shell, into that sealed container. Truffle aroma is fat-soluble and egg yolk is fat-rich, so the perfume slips through the shell and into the yolk. A day later you've got intensely truffled eggs with no truffle in the pan — you can have your truffles and eat it too.

Do I need a truffle shaver?+

Yes — a proper one earns its place.

The aroma lives in ultra-thin slices, and only an adjustable truffle shaver gets you there. A cheese slicer or knife bruises and wastes the truffle. Ours has stainless-steel blades and an oak handle, handcrafted in Italy, with adjustable thickness for that paper-thin shave.

Where does my truffle come from?+

From real European farms we can show you — Italy, Spain, or France.

We source for the best truffle any given week, wherever it is, so we don't fix an origin at checkout. Instead, every shipment includes a QR code to a page built just for it: a film of a real hunt at each source farm, and — for every truffle — its harvest date and time, the hunter and dog who found it by name, and the farm's general geography. That's where you'll see exactly which country and region your truffle came from. We keep the precise location private, the way the best truffle grounds always have been; the rest is an open book.

Fresh truffle FAQ

Questions people ask us

When are fresh black truffles in season?+

Fresh Périgord black truffles are in season roughly early December through the second half of March in the Northern Hemisphere, with a second window from June through August, when the same species is harvested in the Southern Hemisphere's winter. These are normal-year windows; nature varies them.

Can you get fresh black truffles in summer?+

Yes — and they're the real thing. From June through August, ATC sources the same Périgord black truffle (Tuber melanosporum) from the Southern Hemisphere's winter harvest. That's not the lesser summer truffle (T. aestivum); it's the same prized species, in season on the other half of the planet.

How long do fresh truffles last?+

About 10–15 days with proper care, and they're at their best within about 5 days of arrival. Because ATC truffles reach you so soon after harvest, that usable window runs longer than the two-to-three days typical of truffles that traveled the long way.

Can you freeze truffles?+

It's best not to. Freezing won't make a truffle unsafe, but it ruins the texture and aroma — a thawed truffle turns soft and won't shave cleanly. Buy it fresh, enjoy it fresh.

How much fresh truffle should I plan per person?+

Plan on roughly 10–15 grams per person when the truffle is the star of the dish, and less as a finishing shave. Our sizes list servings for exactly this reason — 25g serves 2–3, 100g serves 7–8, and so on.

Which country will my truffle come from?+

Italy, Spain, or France — we don't fix that at checkout. No country's truffles are inherently better; the best any given week depends on local climate and logistics, so we source for the finest truffle wherever it is that week. Your truffle's exact country and region are revealed on its provenance page. It's curation you can check, not a guess.

Is it really from where you say?+

Yes, and you can check. Every shipment's QR code opens a page with a film of a real hunt at each source farm, and — for every truffle — its harvest date and time, the hunter and dog by name, and the farm's general geography. Because a European shipment can gather several farms, you may meet more than one.

Can I send fresh truffles as a gift?+

Yes. Gifting is available today: add a message and we'll transcribe it by hand onto ATC card stock and include it with the shipment. You choose the delivery week at checkout.
