Chief Truffle Officer & Managing Director

Robert Chang

Robert brings his technical training (Stanford University: B.S. in Electrical Engineering and minor in Biology, M.S. in Electrical Engineering and qualified for the Ph.D. program) to continually push the scientific envelope in truffle cultivation. He also uses his experience and knowledge in technology and engineering to help ATC client-partners design and implement electronic monitoring systems, moisture-sensing irrigation systems, drainage system and environmental monitoring systems – all central to the collection of data and fine-tuning of truffle cultivation methodology.

Distribution of truffles produced is a major component of truffle cultivation, in fact, it’s as important as the scientific knowledge and data used to actually grow the truffles themselves. For this, Robert brings extensive experience in sales, marketing and business development from his days in Silicon Valley, which he applies to developing long-term relationships with significant truffle users nationwide, including leading chefs and specialty markets. On behalf of all client-partners, Robert is building brand recognition and relationships with leading chefs and truffle end users, central in the successful distribution of truffles produced by ATC’s client-partners. Based in the San Francisco Bay Area, Robert also holds an MBA from Stanford University Graduate School of Business and is a foodie who loves to cook.

Chief Scientist

Prof. Paul Thomas

In addition to his role as Chief Scientist with American Truffle Company, Prof. Paul Thomas is also the lead researcher and Managing Director of Mycorrhizal Systems Ltd. in the UK. Being absolutely passionate about truffles and the understanding of their biology, he is recognized worldwide as an expert on the cultivation of truffles and has actively engaged in many areas of truffle research. Prof. Thomas received his Bachelor of Science with honors in Natural Environmental Science from the University of Sheffield (England), followed by a doctoral dissertation focusing on long distance signaling pathways within the plant kingdom, which is central in truffle cultivation. Having published throughout the course of his study, Prof. Thomas quickly earned his Ph.D. from the University of Sheffield.

Towards the end of his doctoral studies, Prof. Thomas was awarded a university grant to commercialize the technology developed during his time at Sheffield and enhance a new system he pioneered to inoculate trees with numerous truffle species. Having actively researched European truffles since 2001, he has built a solid reputation and developed what is now the world’s largest and most diverse range of truffle research sites worldwide. Spanning four continents and a range of climatic and edaphic (soil) zones, the results from these ongoing sites have changed and challenged our understanding of truffles and their biology. Since 2020, Prof. Thomas has been appointed an Honorary Professor with the University of Stirling (UK), an exceptional distinction and testament of his world-class academic achievement in the field of truffles.

Operations Administrator & Partner Relations

Peta Shindle

Peta Shindle is the organizational heartbeat of ATC, ensuring our grower-partners receive the guidance, clarity, and support they need at every stage of their orchard journey. With a background rooted in luxury hospitality across Australia and Canada, Peta has spent her career making complex operations run smoothly and keeping communication flowing between teams and decision-makers.

Her hospitality experience—spanning front-of-house operations to serving as the coordination hub for hotel executive committees—gave her a strong foundation in high-touch service, detailed project management, and the kind of calm, clear communication partners rely on. After stepping back to raise her two daughters, she continued to lead community organizations before joining ATC in 2016, inspired by a longtime love of food and a fateful meeting with Robert Chang at the Napa Truffle Festival.

Today, Peta manages operations administration and partner relations, working alongside the Managing Director and supporting sales & retail, operations, and orchard coordination. For grower-partners, she serves as a consistent point of contact—helping align schedules, clarify next steps, connect experts, and ensure every detail is handled. Her work reflects what she does best: keeping teams aligned, keeping communication clear, and making sure partners always feel informed and supported.

Our Advanced Truffle Tree Nursery

From our state-of-the-art Oregon nursery facility, ATC supplies certified truffle trees throughout North America. Unlike nurseries that only sell trees, we carefully control every step of the process because our success as a partner depends entirely on yours.

We start with hand-selected acorns from our own partner orchards—ensuring known provenance and superior genetic strains. Each acorn is germinated in exceptionally clean, controlled conditions that eliminate contamination from the start. Then we inoculate every seedling using our advanced certified scientific protocol, proven to have produced truffles on four continents.

Before any tree ships, it must pass rigorous mycorrhizal colonization and DNA analysis. This guarantees two critical factors: maximum mycorrhizal content for higher future yields, and no contamination from competing truffle species. Since we only earn when you harvest truffles, we produce the highest quality trees that science can deliver—not just the trees that are easiest to sell.

Each January, American Truffle Company organizes and presents the Napa Truffle Festival—widely recognized as North America’s premier truffle event, set in Napa Valley, the food and wine mecca of the country. For a prospective grower, that matters for several reasons.

First, the festival brings together Michelin-star and master chefs with world-renowned truffle scientists in the heart of wine country, showcasing exactly the intersection ATC lives in: cutting-edge truffle science and top-tier cuisine. Second, it is a powerful demand engine for your truffles—featured winery lunch, dinner and events highlight ultra-fresh American black truffles, helping chefs, sommeliers, and media experience just how exceptional American Périgord truffles can be compared with imports. Third, the festival hosts the Scientific Truffle Grower Seminar, a full-day immersion into truffle business fundamentals and the latest cultivation science, plus orchard visits and truffle dog sessions—designed specifically for current and future growers.
