Why does ATC grade truffles on perfume instead of looks?+

Because aroma is flavor — and the most fragrant truffle is rarely the prettiest one.

Beautiful, uniform specimens matter to chefs shaving tableside, where the truffle is part of the show. At home, no one sees the truffle whole — they taste it. So we grade on nose first and looks second, and pass you the best-smelling truffle even when it's a little rustic in shape. That's the trait that decides how your dish tastes.

How does Harvest On-Demand work?+

You pick a delivery date; we harvest for it.

Order by 12:00 noon Pacific and your grower's two-day harvest notice begins that day (after noon, the next day). Your truffle is harvested and shipped the same day and sent overnight, arriving on your chosen date — Tuesday through Saturday. That's the difference between a truffle harvested for you and one waiting in a cooler for a buyer.

How is my truffle packed and shipped?+

In an insulated box with refrigerant gel packs, shipped overnight by an express carrier, with each truffle individually wrapped in moisture-wicking paper. That paper pulls away the condensation that would otherwise invite mold and spoilage, so your truffle arrives cold, clean, and firm on the date you selected.

How do I store a fresh truffle — and can I freeze it?+

Refrigerate it, and never freeze it.

Wrap the truffle in a clean, dry paper towel, changed daily, and keep it in a hermetically sealed container so the aroma stays in. Watch for refrigerator cold spots that can dip below freezing. Freezing isn't a safety problem — it's a quality one: a thawed truffle turns soft and loses the texture and aroma that make it worth shaving. Stored well, an ATC truffle keeps about 10–15 days, and it's at its best within about 5 days — a longer window than most, precisely because it reaches you so fresh.

The egg trick: tuck a few whole eggs, in the shell, into that sealed container. Truffle aroma is fat-soluble and egg yolk is fat-rich, so the perfume slips through the shell and into the yolk. A day later you've got intensely truffled eggs with no truffle in the pan — you can have your truffles and eat it too.

Do I need a truffle shaver?+

Yes — a proper one earns its place.

The aroma lives in ultra-thin slices, and only an adjustable truffle shaver gets you there. A cheese slicer or knife bruises and wastes the truffle. Ours has stainless-steel blades and an oak handle, handcrafted in Italy, with adjustable thickness for that paper-thin shave.

Questions people ask us

When are fresh black truffles in season?+

Fresh Périgord black truffles are in season roughly early December through the second half of March in the Northern Hemisphere, with a second window from June through August, when the same species is harvested in the Southern Hemisphere's winter. These are normal-year windows; nature varies them.

Can you get fresh black truffles in summer?+

Yes — and they're the real thing. From June through August, ATC sources the same Périgord black truffle (Tuber melanosporum) from the Southern Hemisphere's winter harvest. That's not the lesser summer truffle (T. aestivum); it's the same prized species, in season on the other half of the planet.

How long do fresh truffles last?+

About 10–15 days with proper care, and they're at their best within about 5 days of arrival. Because ATC truffles reach you so soon after harvest, that usable window runs longer than the two-to-three days typical of truffles that traveled the long way.

Can you freeze truffles?+

It's best not to. Freezing won't make a truffle unsafe, but it ruins the texture and aroma — a thawed truffle turns soft and won't shave cleanly. Buy it fresh, enjoy it fresh.

How much fresh truffle should I plan per person?+

Plan on roughly 10–15 grams per person when the truffle is the star of the dish, and less as a finishing shave. Our sizes list servings for exactly this reason — 25g serves 2–3, 100g serves 7–8, and so on.

Is it really from where you say?+
