Black Truffle Arancini Recipe by Chef Jarad Gallagher
In 2014, the Napa Truffle Festival invited Chef Jarad Gallagher of Michelin star Chez TJ in Mountain View to participate as a guest chef during the festival weekend. His friendly, bright contributions included a dish for the Saturday Truffles & Wine Dinner at La Toque, and a cooking demonstration and truffle menu for the Winery Truffle Lunch at HALL Wines.
A Seattle native and second-generation chef, Chef Jarad began cooking at the age of five alongside his father. His unique upbringing included fishing, farming, hunting and foraging, which he appreciated as part of the magical madness that can occur in kitchens. By the age of 19 he was a sous chef and by 21 he was an executive chef. His passion for French cuisine then led him to intensive training at Le Cordon Bleu in Paris and London, followed by a stage at the celebrated Bras restaurant in Laguiole, France. Back in the US, he worked at the acclaimed Michelin starred Michael Mina, One Market and Plumed Horse before taking the helm at the kitchen of the popular and lovely Chez TJ where he has expanded on the connection between food, health and good living.
